Bring a friend. ‌A favourite of Auguste Escoffier and Allen Ginsberg, the Ukrainian broth can stir up strong feelings. ‌Borshch, as Ukrainians spell it, may be theirs but beet-stained bowls litter tables the world over. Russian emigrés took it to Paris, where Auguste Escoffier served it at the Ritz, marvelling at the incarnadine broth. The resorts of the Catskills, once popular with Jewish New Yorkers, were known as the Borscht Belt. ‌ ‌The soup must balance sweet, sour and savoury flavours. Sourness should come from kvas, made by slowly fermenting beetroot with rye bread and water. ‌Tomato puree and little splash of balsamico works too. ‌Making kvas you can skip; making proper stock you cannot. Simmering a cut of beef, with onions, garlic and bay leaves is a good savoury start, though coastal Odessans use fish. While watching the best minds of his generation destroy themselves with drugs, Allen Ginsberg cooked borscht using only vegetables. ‌ ‌The sweet earthiness of beetroot rounds off the flavour. The candy-striped variety along with tomatoes, give the broth a delicate crimson hue. Other vegetables, from potatoes to cabbage, that stalwart of the shtetl, are added too. ‌ Topped with sour cream, dill and ground with garlic and salt, borscht is serious eating. It can be gussied up; Anatoly Komm, a starry Russian chef, serves it in capsules. But true borscht, the kind sailors revolt over, is a dish of home and earth and heart. Jonas er en af Københavns mest fremadstormende unge jazzmusikere. Som trompetist ses han i forskelligartede projekter fra straight-ahead til modern og freejazz, men det er tydeligt at han har en brændende passion for jazzens rødder og hans personlige udtryk er formet af denne kobling til genrens historie. Denne aften vil Jonas præsentere sin egen kvartet som vil spille en række originale numre samt en håndfuld særligt udvalgte kompositioner fra den amerikanske sangbog. Entre: 50 kr (til musikken) Jonas is one of Copenhagen's rising jazz stars. He plays trumpet in a multitude of projects, from straight-up to modern and free jazz, but it is clear he has a burning passion for jazz roots and his personal expression is formed by that affinity with the history of the genre. For this concert, Jonas presents his own quartet who will play a number of originals as well as a handful of specially selected compositions from the American songbook. Entrance: 50kr (to musicians)

If there ever was a dish, which exemplified the heydays of the British Empire, it would be the ‘Mulligatawny Soup'. Inspired by India's very own hot and spicy rasam, Mulligatawny was once so popular that it went with British officers, bureaucrats and even adventurers across the world, and into every home in England by the 19th century. The soup is combination of rice, vegetables, meat and spices, and was first made by Indian cooks working in the homes of the East India Trading Company officials, and was later served to soldiers in army barracks and sailors on ships... Duoen EN:1 spiller musik i øjenhøjde, en til en. Små, fine og enkle arrangementer af melodier de kan lide - fra barok og klassisk over swing til fransk og nordisk folkemusik. Fælles er at det er den smukke melodi, det gode swing, eller den særlige stemning der binder hele repertoiret sammen med en rød tråd der fører lytteren gennem et rigt, betagende musikalsk landskab. Duoens lyd er kendetegnet ved nøgleharpens særlige middelalderklang og guitarens sprøde toner, der smelter sammen i et lyst og legende univers. Det var kærligheden til musikken og glæden ved samspillet der førte til duoens tilblivelse. Side om side har de spillet adskillige koncerter med bæde balkan/rockbandet Rækværk og folkbandet Rauna. Sammen fik de lyst til at udforske nye og kendte veje. EN:1 består af Carina Juul, nyckelharpa & Thomas Birch, guitar. Entré: 50kr The duo EN:1 plays music at eyehight. Small, elegant arrangements of melodies they like - from baroque pieces to tunes from the diverse north european folk tradition. Common is the special mood which binds the repertoire together and takes the listener through an enchanting musical landscape. The sound of the duo is influenced by the special characteristics of the chromatic nyckelharpa with its distinct timbre combined with the acoustic guitar. EN:1 is Carina Juul on chromatic Nyckelharpa and Thomas Birch on acoustic guitars. Entrance: 50kr

Thanks to all who joined for #3, luscious sounds and great chats all night long...we are going to be continuing all through the Winter, so please spread the word, invite a friend, hunt out that record you haven't listened to in years. ***Artistic blurb*** The importance of music is undoubtable and the impact that it has on our mind is profound. We need music in our life and to challenge ourself to resonate with the frequencies that come out of those speakers. Music is of import in social gatherings and there isn’t a party that doesn't have some form of music. There is music for all moods and atmospheres and it is important to notice that music is the only language that we all can understand without speaking about it. Music NEEDS to be shared. There is so much music content out there that deserves awareness. In this context we invite you to bring an album or two that you like (can also be EP’s) and come and share them with fellow like-minded music people. The concept is simple: You play a side of a record that you think needs attention or that has a significant meaning to what defines you. If there is a story connected then feel free to share it and together we listen and hangout in Bobuska’s cozy cave.
